Tip #3

For the long weekend try to eat more yellow fruits & vegetables to help with your joints. As we get older most people will start to complain about knee problems, one reason maybe your not eating enough yellow fruits & vegetables. So, make sure you pick up somthing yellow at the supermarket like corn, yellow squash, yellow apples, peaches, nectarines, yellow bell peppers, pineapple, yellow tomatoes, for more exotic you can try yellow watermelon, yellow kiwi & yellow pears. For this hot weekend try drinking lemon and mint infused water instead of having a soda, you can cut down your calories & sugar by doing this. Enjoy your long weekend with a healthier living. Eat YELLOW!

Oslen's Style of Jack Daniel BBQ Back Ribs

As the hot weather arrives it's time to bring out the BBQ. I have experimented many different BBQ Rib recipes and finally through trial and error I have created my own version of Jack Daniel BBQ Ribs. I must say this is going to be one of those recipes that will make your guests lick their fingers. There is no other replacement for other brands of whiskey, you must use Jack Daniel's or you won't get that same flavor. Instead of using bottled BBQ sauce that is full of preservatives you can easily make your own from scratch in matter of minutes. For a healthier way of living I have slowly stopped buying bottled dressing and sauces. So give this recipe a try for your next BBQ party. Enjoy!
Oslen's Style Jack Daniel BBQ Back Ribs

Yield: 4-6 servings
Cooking time : approximately 2 ½ to 3 hours depending on the thickness of the meat on the ribs.

Ingredients:
§  2 – 3 cans of coke/pepsi
§  ½ cup of Oslen’s Magic Dust (recipe at the bottom)
§  1 cup of Oslen’s Magic Basting Liquid (recipe at the bottom)
§  1 Batch of Oslen’s Magical BBQ Sauce (recipe at the bottom)
§  4 Slabs of back ribs, membrane removed
§  2 cups of Hickory chips soaked in water for 1-2 hours before using (larger chunks are better)
§  charcoal

Directions:

1.   Place back ribs in a ziplock bag and fill it with coke/pepsi enough to cover all the ribs and soak overnight.

2.   Drain the ribs from the coke/pepsi and pat it dry with paper towels. Using a shaker sprinkle the magic dust generously on the front and back of the ribs as well as the edges around the rack and rub the magic dust well into the ribs. Cover it and let it marinade for few hours in the refrigerator but not overnight.

3.   Set up your grill by preheating your charcoal, once the charcoal turns to grey move the charcoal to one side of the grill, place an aluminum pan with 1 inch of water in it over the charcoal side which helps to keep the ribs moist while smoking. On the other side of the grill place a rib rack and lay the ribs with the thickest part at the bottom and closest to the charcoal into the rack. ( you may purchase this metal racks at any BBQ supply store) Now place to soaked hickory chips on top of the charcoal and close the top of the BBQ and let it smoke at 300F for 45 minutes then lift up the lid and spray the ribs with Oslen’s magical basting liquid and add a bit more smoking chips on top of the charcoal and close the lid for another 45 minutes. Keep the lower and upper vents half open while smoking, if the temperature reaches to high close the lower vents a bit more and if you need more heat hope up the lower vents up, the more oxygen let into the grill the higher the heat will be. You may also have to add more charcoal during this process if the charcoal is burning out.

4.   Open the grill and with grill mitts remove the aluminum pan with the water. Place a piece of aluminum foil on top grill on the charcoal side and place the ribs on it and spray the ribs with the Oslen’s magic basting liquid and close the lid and cook for 10 minutes then turn it over and spray with basting liquid and close lid again and cook for another 10 minutes. Keep spraying and flipping the ribs on top of the foil until the ribs are nearly cooked (internal temperature should reach 180 to 190 degrees) Another way to check to see if the ribs are done is to lift the ribs in the middle and if the ends droop down from the middle the ribs will be ready for the next step.

5.   Remove the tin foil and place the ribs back onto the charcoal and now brush a thin layer of Oslen’s Magical BBQ sauce on both sides and grill meat side down for 5 minutes and flip it over and brush another layer and grill for another 5 minutes and repeat this step about 4 to 5 times or until ribs are cooked and browned. Make sure you keep an eye on the ribs as the BBQ sauce will burn quite easily due to the molasses and honey so don’t let it burn.

6.  Remove the ribs from the grill, cut it up and serve.
 
Oslen’s Magical Dust
Yield: about 2 cups
Ingredients:
§  ½ cup Paprika
§  1 cup brown sugar
§  3 tbsp Kosher Salt (fine)
§  1 tbsp black pepper
§  2 tbsp onion powder
§  2 tbsp granulated garlic
§  2 tbsp mustard powder
§  1 teaspoon chipotle chili pepper
Directions:
Mix all ingredients together and store in cool place in an airtight shaker.
 

Oslen’s Magic Basting Liquid
Yield: about one cup
Ingredients:
§  ½ cup white vinegar
§  ½ cup cold water
§  Juice of ½ lemon
§  2 tbsp Worcestershire sauce
§  1 tbsp light soya sauce
§  1 tbsp Tabasco sauce
Directions:
Mix all ingredients together, strain it then fill the liquid into a sprayer bottle and store in refrigerator until ready to use.

Oslen’s Magical BBQ Sauce
Ingredients:
§  6 cloves of garlic (pressed using a garlic press)
§  1 ½ cup Ketchup
§  ¼ cup tomato paste
§  ½ cup white vinegar
§  ½ cup brown sugar
§  ½  lemon juice freshly squeezed
§  ½ cup cooking molasses
§  ¼ cup honey
§  1 teaspoon of freshly ground black pepper
§  ¼ cup Jack Daniels Whiskey
Direction:
1.     Combine Ketchup, tomato paste, white vinegar, lemon juice, molasses and honey together and mix well.
2.     Add pressed garlic, brown sugar, and black pepper to the sauce and mix well, and then add the Jack Daniel Whiskey to the sauce and mix. Now the sauce is ready to be brushed onto the ribs.

Tip #2

Let's try to eat more fruits & vegetables that are colour RED for a healthier HEART in our daily diet. Fruits like strawberries, raspberries, watermelon, pomegranate, red apples, red grapes, pink/red grapefruit, cherries, cranberries, blood oranges are all under the red catagory. Red vegetables consist of tomatoes, red cabbage, red beets, red  peppers, red onion, radicchio, and red potatoes. I am sure you can create a nice healthy red salad for the upcoming Monday to share.
